PROBLEM TO BE SOLVED: To facilitate the production of a food having liquid state or high water content and exhibiting increased bioresponse controlling material (BRM) activity by making a dried and dead cell of lactococcus having strong BRM activity to be easily dispersible in water or using a dried dead bacterial cell.
SOLUTION: The objective bioresponse controlling agent for food additive is produced by homogeneously mixing a water-soluble or water-dispersible diluent composed of powdery polysaccharide or protein such as lactose, corn starch, dextrose or microcrystalline cellulose with dried dead cell of lactococcus having bioresponse controlling action and forming the mixture in the form of granule using an adhesive paste.
